Mandarin Orange Salad

  • ½ cup sliced Almonds
  • 3 tbsp Sugar
  • 1 head of Romaine Lettuce
  • 1 cup Celery, chopped
  • 3 Green Onions, chopped
  • 11 oz. can of Mandarin Oranges
  • Dressing:
  • 3 tbsp Vinegar
  • ¼ cup Canola Oil
  • 2 tbsp Sugar
  • ¼ tsp Salt
  • 1 tsp fresh Parsley, chopped

Sauté almonds and sugar over med-low heat, stirring consistently until the sugar starts to golden. Pour almonds onto a sheet of aluminum foil and let cool. Mix dressing ingredients together in a bowl. In a large bowl, mix together remaining salad ingredients. Top with almonds and salad dressing.
