Spinach Nuggets

  • 10 oz. package of frozen chopped spinach, thawed
  • 1 cup herb stuffing mix
  • 2 tbsp minced onion
  • 1 cup grated parmesan
  • 3 tbsp butter, softened
  • 1 cup bread rumbs or matzo meal
  • 2 beaten eggs

Cook spinach with onion according to spinach package directions. Drain. Mix in bowl, spinach and butter. Add stuffing mix and parmesan. Stir in eggs.

Shape into 1 inch balls. Roll in breadcrumbs. Freeze on cookie sheet and put in freezer bag. They will keep four months in the freezer.

Bake unfrozen nuggets on baking sheet at 375 degrees for 7 minutes. Bake frozen nuggest for 15-20 minutes.
